1- Soak 1 cup of basmati rice in a bowl
2- In a large saucepan add 3 tablespoons of vegetable oil, 1 diced yellow onion, 2 diced tomatoes, 1 diced jalapeño, 1 large pressed garlic clove, about the same about of ginger, 6 chicken drumsticks, 2 tablespoons of Baharat spice mix, cinnamon to taste, salt and pepper.
3- Cook on medium heat for about 5-8 minutes to lightly cook chicken, stirring occasionally.
4- Add about 720ml (3 cups) of chicken broth and simmer for 40 minutes (lid on saucepan)
5- Drain the rice and add it to the saucepan, stir.
6- Cook until the rice soaks up all the liquid (you have to add a little more water if the rice doesn’t get cooked all the way)
7- Add juice from half a lime and about 1 cup of chopped parsley
NOTES: I couldn’t find dried limes that is also needed for this hence why I used lime juice. Baharat spice mix may be hard to find, you can google what it consists of to make your own.
