1- Prepare vegetables, I just used 180ml (3/4 cup) yellow onion, green beans, peas, corn, coriander (cilantro), celery, potatoes, 3 medium carrots, 3 garlic cloves, and 1 can of diced tomatoes.
2- In a pot add about 2 tablespoons of vegetable oil, the onion, carrots and celery and start cooking. After about 3 minutes add the garlic, then about 3-4 cups of vegetable stock.
3- Throw in everything else and cook for about 25 minutes seasoning with salt, pepper, thyme, italian herbs and anything else you feel like
4- After about 25 minutes, add the peas and corn and cook for a few minutes until the potatoes are soft.
NOTES: Feel free to adjust quantity of ingredients and/or spices to suit your taste. I just added 1/2 a cube of a vegetable bouillon to 3 cups of water to make the stock.
