1- Pre-heat oven to 180C (370F)
2- In one bowl crack and mix an egg, in another grind up about 20-30 whole wheat tortilla chips
3- Cut 1 chicken breast into smaller thin strips, dip in the egg then the crushed tortilla chips and place them on an oven safe dish.
4- Place in oven for about 20-25 minutes
5- In a blender add 1 avocado, 120ml (1/2 cup) Greek yogurt, about a cup of coriander (cilantro), juice from 1 lime, 1 garlic clove, and salt and pepper to taste.
6- Pour the avocado mixture on the cooked chicken.
NOTES: For a bit of spice, add about a 1/4- 1/2 of an jalapeño to avocado mix before blending. Cooking time will vary slightly based on thickness of chicken
