Spicy Apricot Tofu Skewers

1- Start cooking about 240ml (1 cups) of brown rice
2- In a bowl mix 120ml (0.5 cup) apricot jam, (60ml (0.25 cup) Siracha, 1 tablespoon of vinegar, about a teaspoon of grated ginger and about a tablespoon of brown sugar.
3- Cut a packet approx. 400g (0.88lbs) of firm or extra firm tofu into squares I use organic tofu from www.house-foods.com
4- Cut about 240ml (1 cup) of pineapple, red bell pepper, mushrooms and red onion into chunks
5- Throw everything in a bowl and mix with sauce
6- Make skewers
7- Broil all sides

NOTES:Drizzle left over sauce on top. Add more Siracha or hot sauce for more spice. I used the organic firm tofu from www.house-foods.com, you can also use their extra firm one.


1-Comienza a cocinar 240 ml (1 taza) de arroz integral
2-En un bowl mezcla 120 ml (0.5 taza) de mermelada de durazno, (60ml (0.25taza)) Siracha, 1 cucharada de vinagre, alrededor de una cucharadita de jengibre rallado y una cucharada de azúcar integral
3-Corta un paquete de aprox. 400g (0.88lbs) de tofu firme en cubos, yo usé @housefoodsamerica (firme)
4-Corta alrededor de 240ml (1taza) de piña, pimiento rojo, champiñones y cebolla morada en trozos.
5-Agrega todo en un bowl y mezcla con la salsa
6-Haz las brochetas
7-Asa todas las partes

NOTAS: Agrega la salsa sobrante encima. Agrega más Siracha o salsa picante para más sabor. Yo use el tofu firme de @housefoodsamerica
