1- Start cooking about 60ml (1/4 cup) brown rice
2- Lightly sauté 1 garlic cube and 60ml (1/4 cup) onion
3- Add about 240ml (1 cup) red kidney beans, 240 ml (1 cup) diced tomatoes, handful of coriander (cilantro)
4- Season with salt and pepper and mix it up.
5- Fry up 2 eggs
6- On a plate add the brown rice, the beans, 1 egg and garnish with some spring onions
NOTES: Add some chili flakes to spice it up a little.
