1- Cut up vegetables of your choice, I used half a red capsicum (bell pepper), half an onion, 2 carrots, and 1/4 of a cabbage.
2- Cut chicken 1 chicken breast into small pieces, start cooking and season with salt and pepper.
3- Once chicken is almost done throw in the vegetables and stir for about 2 minutes
4- In a small bowl add about 350ml (1.5cups) of light coconut milk and about a table spoon of red curry paste (more if you like it spicy, less if you like it mild) and mix it up
5- Pour curry mix over the chicken and vegetables and simmer on med for about 10 minutes stirring occasionally.
6- Start cooking about 60ml (1/4 cup) brown rice.
NOTES: I use boil in a bag brown rice. It comes portioned in a bag, just throw it in some boiling water and let it cook for 10 minutes.
