1- Cook about 480ml (2 cups) of spinach and cheese tortellini
2- Drain and pour in to a bowl then add 1 heaped tablespoon of pesto, 2 tablespoons of whole corn kernels, 1 tablespoon of black beans, handful of spinach leaves, a little shredded mozzarella cheese, and some pepper.
3- Mix it all up and serve
NOTES: I just bought pre made tortellini and I used cilantro pesto. Feel free to add or subtract ingredients to your taste
