1- Pre heat oven to 180C (350F)
2- Cut up some vegetables, I used red capsicum (bell pepper) and spring onions
3- In a bowl add 8 eggs, salt and pepper to taste, and mix it up
4- Lightly grease muffin tray and pour in the egg mixture
5- Add a little cheese on top (optional)
6- Bake for about 20-25 minutes or until a knife inserted near the center comes out clean.
NOTES: Feel free to add any vegetables you want.
