1- Pre heat oven to 200C (400F)
2- In a bowl crush about 480ml (2 cups) of cornflakes and 160ml (2/3 cups) shredded coconut flakes and add salt and pepper to taste
3- Beat 2 egg whites in a smaller bowl
4- Cut chicken breast into strips.and dip into egg whites then into the cornflake/coconut mix
5- Place on oven safe tray and bake on each side for about 7 minutes.
NOTES: Make sure the chicken is fully cooked. Served with some sriracha (spicy sauce)
