1- Cut up 1/2 breast of BBQ/rotisserie chicken into small pieces
2- In a bowl mix 2 eggs, the diced chicken pieces, spring onion slices, 1 small pressed garlic clove, a little shredded cheese (optional), and salt and pepper to taste.
3- Pour in pan and start cooking
4- Flip it over or in half and serve with some cottage cheese
NOTES: Feel free to add or leave out ingredients. If you plan on using uncooked chicken breast make sure you cook it first before adding it to the egg mixture.
