1- Preheat oven to 200C (400F)
2- Cut 2 bacon slices up and start cooking
3- Add 2 eggs to the bacon and continue cooking (don’t overcook eggs) and season with salt and pepper
4- On whole wheat flat bread, spread some tomato paste, add the egg and bacon mix, and some shredded mozzarella cheese
5- Place in oven for about 10 minutes
NOTES: Substitue bacon with turkey bacon for healthier version.
