1- Preheat oven to 200C (400F)
2- Cut zucchini in half (length ways) and brush with olive oil
3- Add some chopped tomatoes, basil and parmesan cheese on top
4- Throw them in the oven for about 15-20 minutes.
NOTES: Ideal for an appetizer, tv snack or a side dish. Feel free to season with your favorite seasoning. I just add a little pepper. I used a total of 1 tomato and 2 tablespoons of parmesan cheese.
